make your own tortilla chips

I think this would really impress guests at say a Super Bowl Party, or the like. It isn’t as hard as it sounds.

Recently I made chili, and we had some leftover corn tortillas, so I heated up some oil, and in a matter of minutes we had warm chips. Tonight we tried flour and white corn – all were quite tasty.

Here’s how:

Cut tortillas of your choice in half. Then cut the halves in half and so on until you have triangles. Heat some canola oil in a pan. You need about 3/4 to 1 inch of oil. Get it hot enough so that if you hold your hand a few inches over the pan you can really feel the heat. Add some of your tortilla triangles. Don’t overcrowd the pot. Let them brown on one side, flip them, and then brown the other side.

Remove them from the oil, place them on a paper towel lined plate and spinkle immediately with salt. Repeat until all your tortillas are done. Serve plain or with your favorite salsa. Best warm. I didn’t try it but I bet you could keep them warm in a 200F oven if you wanted to make them before your guests arrived.
